Ingredients2 c ap flour 1 egg lightly beaten
1 c sugar 1 t vanilla
2 t baking powder 2 c blueberries
1/2 t salt 1/2 c milk
1/2 c melted/ cooled butter
Directions Preheat oven to 400. Line a muffin tin.
In a large bowl stir together flour, sugar baking powder and salt.
In another bowl, mix all wet ingredients.
Make a well and stir wet into dry ingredients. Mash 1/4 c blueberries and stir into batter.
Stir in remaining blueberries and 1/2 c walnuts if desired.
Spoon batter into muffin cups and sprinkle with sugar. Bake 20-25 minutesuntil cake tester comes out clean. Mini muffins bake for 15 minutes. Remove from oven and cool for 5 minutes. Serve warm. They freeze well.
